Beef Birria
Ingredients:
500g Beef Barbacoa
100g Pinto Beans
100g Black Beans
400g Tinned Tomatoes - dried
1 White Onion
2 cloves of Garlic
1 Beef Stock
500ml Water
50g Parsley
50g Coriander
1 tsp Cumin
1 tsp Ancho
1 tsp Cinnamon
1 tsp Pepper
1 tsp Guajillo Chili
1 Tbsp Vegetable Oil
Method:
Shallow fry Onions, Garlic, Parsley and Coriander in Vegetable Oil on a low heat
Once the Onions are clear add the Beef Barbacoa, Cumin, Ancho powder, Guajillo powder, Oregano, Pepper and Cinnamon then fry for a further 2 minutes
Add stock boiling Water, Tinned Tomatoes, Pinto Beans and Black Beans then boil until the beans are soft
Serve with Rice or Tortillas
