Cactus Scrambled Egg (Nopalitos con Huevos)
Ingredients:
2 Cloves garlic
1 Tbsp vegetable oil
1/2 onion
4 eggs (beaten)
Salt (to taste)
Pepper (to taste)
Cilantro
Method:
In a saucepan over a medium heat, heat the oil
Add the onions and garlic then cook until softened
Add the cactus and cook for around 2 minutes
Add the eggs and cook until they’re set but slightly wet
Season with salt and pepper
Remove from heat, garnish with chopped cilantro and serve with warm tortillas
