Plantain Tortilla Bowl
Ingredients:
15 pieces of Sweet Plantain
500g of Mexican Rice
200g of Black Beans
200g of Sweetcorn
100g Butter
10g Coriander
Method:
Bake your tortillas in a mould for 5 minutes at 180°c and leave to cool.
Melt the butter in a pan and lightly fry sweet corn kernels, black beans, coriander and jalapeño until the the beans are soft.
Leave the mixture to cool.
Microwave the Mexican rice until it is piping hot.
Deep fry the plantain at 180°c for 3 to 4 minutes.
Spread the rice on the base of the tortilla mould and top with corn salad and 3 pieces of plantain per bowl.
